Then look no further than my tasty pumpkin soup.
Creamy, smooth and most of all delicious, with a hint of heat, this winter soup is a tried and tested one in my house.
My kids love it so much they even take it to school in a thermos for lunch!
Simple ingredients combined with an even simpler method makes for one comforting soup you’ll go back to again and again, I hope.
Add a piece or two of warm garlic bread, or a crusty roll, and what’s not to love?
Ingredients
1 medium butternut pumpkin peeled, seeded and cubed
2 cups chicken stock (I like to use those jelly-looking stock pods)
2 cups vegetable stock
1 brown onion diced
1 carrot diced
A good chunk of sweet potato
Cracked pepper to your liking
Method
Combine all ingredients in a suitable pot on the stove and let simmer for about 60 minutes (or until vegetables are tender).
If you’re like me and prefer a smooth soup, allow the soup to cool before blitzing in a food processor or blender.
Serve with fresh buttered bread or rolls, or a piece or two of garlic bread and some fresh chives.
